We make California wines with a French accent, using only top-quality
European cooperage, but the oak never dominates the fruit. We treat our fruit with great care. It is brought in immediately from the vineyards located within 100 yards or less of the winery. It is gently crushed and de-stemmed. When fermentation is near completion and we press-off the new wine, we don't press hard; thus, no harsh tannins and no "stemmy" characteristics. We use traditional techniques that achieve a distinct "fruitiness" to our wines and we don't manipulate the wines with "high-tech" gadgets and machines.
